
Pimm's No. 1 Cup Cocktail
Method
Pour the Pimm's directly over cubed ice into a sling glass
Next top with the lemon lime soda
Garnish with a sprig of mint, slice of cucumber & the lemon zest

1 oz Sauza Blanco Tequila
1 oz Sake (Kome Dake no Sake)
1 oz Jasmine Green Tea Syrup
2 slices fresh jalapeno (size of a dime)
Glassware: Old Fashioned Glass
Method
Jasmine Green Tea Syrup Preparation: 1 part strongly steeped Jasmine Green tea, mixed with 1 part granulated sugar
Muddle the fresh jalapeno slice in a mixing glass.
Next add the Tequila, Sake, limejuice & jasmine syrup.
Shake vigorously with ice until very chilled
Taste & adjust if necessary to balance
Double strain (using a tea strainer) into an old fashion glass, over crushed ice
Garnish: Float a single fresh Jalapeno slice on the surface
Moonlight Cocktail
1 1/2 oz Moonlight Shochu
1/2 oz Falernum (Lime, Clove, Almond Syrup)
1 slice fresh jalapeno (size of a dime)
1 thin slice of cucumber for Garnish
Method
Muddle the Jalepeno slice in a Mixing Glass
Add the Shochu, plum wine, lime juice & Falernum Syrup
Next add the Tequila, Sake, limejuice & jasmine syrup.
Shake with ice until very cold
Double Strain into a chilled Martini Glass
Garnish with a thin Cucumber Slice
Kaffir Fling
2 oz Wyborowa Exquisite Vodka
1 oz Orgeat (almond syrup)
5 Kaffir Lime Leaves (medium size)
2 Slices Ginger (the size of a 25c coin)
1 oz Freshly squeezed Limejuice or the juice of one whole lime
Glassware: Aromatic White Wine Glass (Pre-chilled & polished for presentation)
Method
Muddle 4 of the Kaffir lime leaves and fresh ginger in a mixing glass
Add the Vodka, Orgeat, and fresh limejuice
Shake without ice and strain through a fine strainer into another mixing glass
Add the egg white and Ice
Shake very, very well until ice forms on the outside of the shaker
Strain neat into an aromatic white wine glass using a hawthorne strainer
Hold a pinch of cinnamon in one hand above the lighter or match in the other and sprinkle the cinnamon so that it sparkles and lands a light dusting over the surface of the Kaffir Fling
Garnish with one Kaffir lime leaf, clapped between your hands to release its aroma and place on the top of the cocktail
